Ingredients List:
Syrup:
- 1/2 cup sugar
- 1/2 cup water
- 3 tbsp. lemon juice
Pie:
- 9" frozen pie shell
- 3/4 cup semolina
- 1/2 cup sugar
- 4 cups milk
- 3 eggs
- 2-3 ripe peaches

Method:
- Pre=heat oven to 350*f/160*f
- In a saucepan, combine all the ingredients of the syrup
- Bring to a boil until sugar has completely dissolved and set aside
- In a large bowl add semolina and sugar. Mix with hand mixer until combined
- Add the milk and eggs and beat until thoroughly combined
- Pour custard mixture in large saucepan and heat on medium heat stirring almost constantly
- Once custard has thickened pour into pie shell
- Peel and slice peaches and place on top of custard
- Bake @ 350*f for 25-35 minutes
- Immediately after removing from oven, drizzle with cooled syrup until custard is really saturated
