Galaktoboureko Peach Pie

galaktoboureko peach pie

  Ingredients List:

  Syrup:

  • 1/2 cup sugar
  • 1/2 cup water
  • 3 tbsp. lemon juice

  Pie: 

  • 9" frozen pie shell
  • 3/4 cup semolina
  • 1/2 cup sugar
  • 4 cups milk
  • 3 eggs
  • 2-3 ripe peaches

Method:

  1. Pre=heat oven to 350*f/160*f
  2. In a saucepan, combine all the ingredients of the syrup
  3. Bring to a boil until sugar has completely dissolved  and set aside
  4. In a large bowl add semolina and sugar. Mix with hand mixer until combined
  5. Add the milk and eggs and beat until thoroughly combined
  6. Pour custard mixture in large saucepan and heat on medium heat stirring almost constantly
  7. Once custard has thickened pour into pie shell
  8. Peel and slice peaches and place on top of custard
  9. Bake @ 350*f for 25-35 minutes
  10. Immediately after removing from oven, drizzle with cooled syrup until custard is really saturated

 

Notes & Tips:
  • Makes 6-12 pieces
  • Serve hot or chilled
  • Add syrup gradually as it takes some time for the custard to absorb it
  • Custard can be made ahead and refrigerated before baking
