Method:

  1. In a large pot, chop and saute onion in the olive oil for 3 minutes
  2. Chop and add garlic
  3. Grate tomato and add to pot
  4. Add green beans, oregano, parsley and water to pot and stir well
  5. Cover and simmer for 20-30 minutes

 

Notes & Tips:
  • Makes 4 servings
  • Serve with feta, Greek bread, meat, poultry or fish
  • Can be served as a vegan main or side
  • Add optional chili flakes for added heat
