Greek Bean Soup | Easy Fasolada Recipe Ready In 30 Minutes

Ingredients List:
- 1 onion
- 1 cup Greek extra virgin olive oil
- 2 carrots
- 2 celery stalks
- 1 heaping tbsp. tomato paste
- x2 540ml cans of white kidney beans
- 4 cups water
- Salt & pepper to taste

Method:
- Chop carrots and celery into 1/2" pieces and start browning in olive oil
- Slice onion and add to pot
- Sauté for about 5 minutes
- Add tomato paste and cook for 3 more minutes
- Add beans & water and bring to a boil
- Reduce heat, cover and simmer for about 20 minutes or until veggies are done
