Greek Bean Soup | Easy Fasolada Recipe Ready In 30 Minutes

  Ingredients List:

  • 1 onion
  • 1 cup Greek extra virgin olive oil
  • 2 carrots
  • 2 celery stalks
  • 1 heaping tbsp. tomato paste
  • x2 540ml cans of white kidney beans
  • 4 cups water
  • Salt & pepper to taste
 

Method:

  1. Chop carrots and celery into 1/2" pieces and start browning in olive oil
  2. Slice onion and add to pot
  3. Sauté for about 5 minutes
  4. Add tomato paste and cook for 3 more minutes
  5. Add beans & water  and  bring to a boil
  6. Reduce heat, cover and simmer for about 20 minutes or until veggies are done
