Greek Bean Soup with Bacon | Fasolada

Ingredients List:
- 2 cups dry white beans
- 1 onion
- 8 cups water
- 1 cup Greek extra virgin olive oil
- 1 bay leaf
- 1 tbsp. tomato paste
- 1 tsp. dried Greek oregano
- 4 garlic cloves
- 2 carrots
- 2 celery stalks
- 3 slices smoked bacon (omit for vegan option)
- Salt & pepper to taste

Method:
- Chop up carrots and celery into bite sized pieces
- Chop onion
- Place all of the ingredients into a large stock pot
- Bring to a boil, reduce heat, cover and simmer until beans are done/soft

Notes & Tips:
- Makes 4-6 servings
- Recipe can be doubled or halved
- Can easily be frozen
- Garnish with finely chopped raw onion, feta and/or Greek extra virgin olive oil
