Greek Chickpea Salad - Revithosalata

  Ingredients List:

  • 2 cups chickpeas (4 cups cooked)
  • 1/2 onion
  • 1 cup chopped cucumber
  • 1 tomato
  • Bunch of parsley
  • 100g feta cheese
  • 1 tbsp. dried Greek oregano
  • Kalamata olives
  • 1/4 cup red wine vinegar
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Place cooked chickpeas on platter (if using dry chick peas, see video for preparation instructions)
  2. Chop and layer cucumber, tomato & onion
  3. Crumble feta over veggies and add the Kalamata olives
  4. Sprinkle oregano over salad and drizzle with vinegar and olive oil
