Greek Eggplant and Okra Stew | Vegan Recipe

Method:
- Chop onion and brown in olive oil in a sauce pan
- After 3 minutes, chop and add carrots, celery and garlic
- Sauté for 6 minutes
- Cut up eggplant into 1" cubes and add to pan
- Add okra, cumin, chopped parsley and oregano and continue to cook for 5 minutes
- Add crushed tomatoes and enough water to cover veggies
- Stir to mix well and bring to a boil
- Once boiling, reduce heat, cover and simmer for 20-25 minutes

Notes & Tips:
- Makes 4-6 servings
- Can be served as a vegan main or side
- Serve with crusty bread and feta cheese
- Drizzle with Greek olive oil when serving
