Greek Eggplant and Okra Stew

  Ingredients List:

  • 2 eggplants
  • 300g okra
  • 1 onion
  • 1 garlic clove
  • 1 celery stalk
  • 2 carrots
  • 1/2 tsp. cumin
  • 1-1/2 cups crushed tomatoes
  • Water as needed
  • Bunch of parsley
  • 1 tbsp. dried Greek oregano 
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Chop onion and brown in olive oil in a sauce pan
  2. After 3 minutes, chop and add carrots, celery and garlic
  3. Sauté for 6 minutes
  4. Cut up eggplant into 1" cubes and add to pan
  5. Add okra, cumin, chopped parsley and oregano and continue to cook for 5 minutes
  6. Add crushed tomatoes and enough water to cover veggies
  7. Stir to mix well and bring to a boil
  8. Once boiling, reduce heat, cover and simmer for 20-25 minutes

 

Notes & Tips:
  • Makes 4-6 servings
  • Can be served as a vegan main or side
  • Serve with crusty bread and feta cheese
  • Drizzle with Greek olive oil when serving
