Baked Chicken & Orzo | Greek Giouvetsi

Ingredients List:

  • 6 bone-in, skin-on chicken thighs
  • 1/3 cup Greek extra virgin olive oil
  • 4 tomatoes
  • 1 onion
  • 2 cloves garlic
  • 450g Greek orzo
  • 4 cups water
  • 1 cinnamon stick (1 tsp, ground)
  • Salt & pepper to taste

Method:

  1. Pre-heat oven to 400*f / 200*c
  2. In a baking dish, grate tomatoes
  3. Add chopped onion and garlic
  4. Add olive oil, orzo and water to baking dish and stir to combine well
  5. Place chicken thighs (skin side up) into tomato orzo mixture
  6. Bake uncovered for 90 minutes @ 400*
