Greek Lemon Oregano Potatoes On The Stove Top

Method:
- In a pot, chop and saute onion in olive oil
- Chop garlic and add to onions
- Peel & dice potatoes and eggplant and add to pot
- Cook for about 10 minutes
- Add oregano and enough water to almost cover the potatoes in the pot
- Bring to a boil, reduce heat and simmer until potatoes are cooked
- Remove from heat and stir in the juice of the lemon
- Stir well and serve

Notes & Tips:
- Makes 4-6 servings
- Serve with bread and/or Greek salad
- To reheat, add about 1/4 cup water
