Greek Meatballs & Rice Bake

greek meatballs & rice bake

  Ingredients List:

  • 2 cups rice
  • 2 cups water
  • 2 cups white wine
  • 1 cup mixed vegetables
  • 1 tbsp. paprika
  • Juice of 1 lemon
  • 1/2 lb. ground beef
  • 1 onion
  • 1 garlic clove
  • 1 egg
  • Bunch of parsley
  • Bunch of mint
  • 1 tbsp. dried Greek oregano
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a baking pan, add first 6 ingredients + half the olive oil
  2. Mix well to combine ingredients
  3. In a bowl, add ground beef, chopped onion and garlic, chopped parsley,  mint, oregano and egg 
  4. Mix well and form into 1" meatballs
  5. Place meatballs in baking pan
  6. Cover and bake for 1 hour @ 400*

 

Notes & Tips:
  • Makes 4-6 servings
  • If there is liquid left over during baking, remove cover and continue to bake until all liquid is absorbed
  • Serve with a side Greek salad & feta cheese
