Greek Mixed Bean Salad

Method:

  1. In a large mixing bowl combine all the ingredients except for the feta and the lettuce
  2. Mix well to combine
  3. In a serving platter, place leaves of lettuce over the entire platter
  4. Spoon bean salad mixture onto lettuce leaves
  5. Slice feta into 1/4" thick slices and place over each filled lettuce leaf
  6. Drizzle with a little more olive oil and sprinkle with a bit more oregano

  • Add pickled baby eggplants (optional)
