Quick & Easy Greek Sausage and Artichoke Stew

Ingredients List:
- 1 lb. Greek orange sausage
- 3 potatoes
- 8 artichoke hearts
- 2 garlic cloves
- Bunch of mint
- Bunch of dill
- 28oz crushed tomatoes
- 14oz water
- 1 cup frozen peas
- 1 onion
- 1 tsp. dried Greek oregano
- 1/3 cup Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- In a stock pot brown sausage whole in 2-3 tbsp. olive oil
- While sausage is browning, chop onions, potatoes and cut in half the artichoke hearts
- Once sausage has browned, remove from pan and set aside
- Add to pot remaining olive oil and sauté chopped veggies
- Chop garlic and fresh herbs and add to pot
- Chop sausages into bite sized pieces and add to pot
- Stir well to combine
- Add crushed tomatoes, frozen peas and water and stir well
- Add oregano and stir well
- Bring to a boil, reduce heat and cover
- Simmer for 20-30 minutes or until potatoes are done

Notes & Tips:
- Makes 4-6 servings
- Serve with feta cheese and fresh Greek bread
- Omit sausage for vegan option
- Can also be served on rice or pasta
- Can be frozen
- Add chili or sriracha sauce for added spice
