Greek Sausage and Artichoke Stew

  Ingredients List:

  • 1 lb. Greek orange sausage
  • 3 potatoes
  • 8 artichoke hearts
  • 2 garlic cloves
  • Bunch of mint
  • Bunch of dill
  • 28oz crushed tomatoes
  • 14oz water
  • 1 cup frozen peas
  • 1 onion
  • 1 tsp. dried Greek oregano
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a stock pot brown sausage whole in 2-3 tbsp. olive oil
  2. While sausage is browning, chop onions, potatoes and cut in half the  artichoke hearts
  3. Once sausage has browned, remove from pan and set aside
  4. Add to pot remaining olive oil and sauté chopped veggies
  5. Chop garlic and fresh herbs and add to pot
  6. Chop sausages into bite sized pieces and add to pot
  7. Stir well to combine
  8. Add crushed tomatoes, frozen peas and water and stir well
  9. Add oregano and stir well
  10. Bring to a boil, reduce heat and cover
  11. Simmer for 20-30 minutes or until potatoes are done

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with feta cheese and fresh Greek bread
  • Omit sausage for vegan option
  • Can also be served on rice or pasta
  • Can be frozen
  • Add chili or sriracha sauce for added spice
