Greek Sausage & Biftekia Bake with Lemon Potatoes

Ingredients List:
- 4 white potatoes
- 1 sweet potato
- 3 celery stalks
- 4 carrots
- 2 tbsp. paprika
- 1 tbsp. dried rosemary
- 4 garlic cloves
- Juice of 1 lemon
- 6 Greek sausages
- 1-1/2 lbs. ground beef
- 1 onion
- Bunch of parsley
- Bunch of mint
- 1 egg
- 1 tbsp. dried Greek oregano
- 1/3 cup Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- Pre-heat oven to 400*f/200*c
- Chop potatoes, celery and carrots and place in roasting pan
- Sprinkle with paprika, rosemary and add 3 minced garlic cloves
- Add the juice of 1 lemon, season and mix well (see video)
- Place the 6 Greek sausages on top of veggies in single layer and set aside pan
- In a large mixing bowl, add ground beef, chopped onion. parlsey, mint, dried oregano and season
- Add egg to ground beef and mix well to combine
- Form into 6 even sized patties and place over sausages (see video)
- Bake uncovered on the middle rack for 1 hour and 15 minutes

Notes & Tips:
- Makes 6-8 servings
- Serve immediately
- Serve with a Greek horiatiki or lettuce salad.
- Can be also be served with mixed greens (horta)
