Greek Style Braised Baby Octopus & Pasta

  Ingredients List:

  • 1/2 lb. baby octopus (octopi LOL)
  • 300g rigatoni pasta
  • 1 onion
  • 1 cup Greek extra virgin olive oil
  • 2 garlic cloves
  • 1 clove
  • Chili flakes (optional)
  • 1/2 tsp. cinnamon
  • 1 tbsp. tomato paste
  • 1/2 cup white wine
  • 1 cup crushed tomatoes
  • 2 cups water
  • Salt & pepper to taste
 

Method:

  1. Cut up octopus into quarters
  2. In a large pot, brown octopus in olive oil
  3. Slice onions and garlic,  add to pot and simmer for 5 minutes
  4. Add clove and cinnamon and cook for another 2 minutes
  5. Add tomato paste and cook for 3 minutes
  6. Deglaze with wine and cook for 3 minutes until alcohol burns away
  7. Add crushed tomatoes and water
  8. Bring to a boil, reduce heat, cover and simmer for 1 hour 
  9. Cook pasta to desired doneness
  10. Drain and add to sauce pot
  11. Mix well and serve immediately

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with Greek lettuce salad
  • Substitute rigatoni for any pasta of choice
