Greek Style Egg Salad - Easy No Mayonnaise Egg Salad Recipe

Greek Style Egg Salad

  Ingredients List:

  • 12 eggs (hard boiled & peeled)
  • 150g feta cheese
  • Head lettuce
  • Pickled beans (substitute your pickled choice)
  • 50g Greek kefalograviera cheese
  • Bunch of parsley 
  • 1/2 cup Kalamata olives
  • 1/3 cup Greek extra virgin olive oil
  • Paprika for garnish
  • Salt & pepper to taste
 

Method:

  1. Coarsely chop eggs and place into a large bowl
  2. Crumble in feta and drizzle with olive oil
  3. Remove pits from the Kalamata olives and add to bowl
  4. Season to taste and stir to mix well
  5. Arrange lettuce leaves onto a serving platter
  6. Add pickled veggies over lettuce
  7. Using a tablespoon, evenly spoon over egg salad throughout platter
  8. Chop parsley and sprinkle over platter
  9. With a veggie peeler, shave kefalograviera over entire platter
  10. Lightly sprinkle with paprika for added colour and garnish

 

Notes & Tips:
  • Feel free to substitute or omit the pickled beans
  • Substitute the kefalograviera cheese for any other sharp cheese
  • Egg salad mixture can be made ahead and assembled when needed
  • Perfect as a light lunch or appetizer
