Greek Style Egg Salad - Easy No Mayonnaise Egg Salad Recipe

Ingredients List:
- 12 eggs (hard boiled & peeled)
- 150g feta cheese
- Head lettuce
- Pickled beans (substitute your pickled choice)
- 50g Greek kefalograviera cheese
- Bunch of parsley
- 1/2 cup Kalamata olives
- 1/3 cup Greek extra virgin olive oil
- Paprika for garnish
- Salt & pepper to taste

Method:
- Coarsely chop eggs and place into a large bowl
- Crumble in feta and drizzle with olive oil
- Remove pits from the Kalamata olives and add to bowl
- Season to taste and stir to mix well
- Arrange lettuce leaves onto a serving platter
- Add pickled veggies over lettuce
- Using a tablespoon, evenly spoon over egg salad throughout platter
- Chop parsley and sprinkle over platter
- With a veggie peeler, shave kefalograviera over entire platter
- Lightly sprinkle with paprika for added colour and garnish

Notes & Tips:
- Feel free to substitute or omit the pickled beans
- Substitute the kefalograviera cheese for any other sharp cheese
- Egg salad mixture can be made ahead and assembled when needed
- Perfect as a light lunch or appetizer
