Greek Style Filet of Sole Stuffed Peppers

  Ingredients List:

  • 6 bell peppers
  • 4 sole filets
  • 1 onion
  • 2 garlic cloves
  • Bunch of dill
  • Bunch of parsley
  • 1-1/2 cups crushed tomatoes
  • 1-1/2 cups rice
  • 2 potatoes
  • 1 cup water
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Top and core peppers and set aside
  3. In a mixing bowl, chop and add onion, garlic, herbs,1/3 of the crushed tomatoes, 1/2 the olive oil and rice and mix well
  4. Loosely stuff peppers and place in baking pan
  5. With a sharp knife, puncture sides of peppers (see video)
  6. Peel and quarter potatoes and set in between peppers
  7. Mix remaining crushed tomatoes, olive oil and water and drizzle over peppers
  8. Cover and bake for 1 hour
  9. Remove cover and bake for another 30 minutes or until peppers  start to brown 

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with fresh Greek bread and feta
  • Can be made ahead and frozen
  • Use a food processor for easier prep.
