Greek-Style Smashed Potatoes (Lemon, Olive Oil & Oregano)

Ingredients List:
- 2-3 lbs. potatoes
- Juice of 1 lemon
- 50g feta cheese
- 1 tbsp. dried Greek oregano
- 1/3 cup Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- Pre-heat oven to 375*f / 180*c
- Peel and boil potatoes until fork tender
- Drizzle bottom of roasting pan
- Drain potatoes, place in pan seasoning well
- Drizzling with half the olive oil and half the lemon juice
- Roast for 30 minutes
- After first roasting, press potatoes down with potato masher to flatten a little (see video)
- Drizzle with remaining olive oil, lemon juice and sprinkle oregano evenly
- Roast for another 30 minutes
- When potatoes are done, top with crumbled feta and broil 3-4 minutes or until cheese is melted and blistered
