Greek-Style Smashed Potatoes (Lemon, Olive Oil & Oregano)

  Ingredients List:

  • 2-3 lbs. potatoes
  • Juice of 1 lemon
  • 50g feta cheese
  • 1 tbsp. dried Greek oregano
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 375*f / 180*c
  2. Peel and boil potatoes until fork tender
  3. Drizzle bottom of roasting pan
  4. Drain potatoes, place in pan seasoning well
  5. Drizzling with half the olive oil and half the lemon juice
  6. Roast for 30 minutes
  7. After first roasting, press potatoes down with potato masher to flatten a little (see video)
  8. Drizzle with remaining olive oil, lemon juice and sprinkle oregano evenly
  9. Roast for another 30 minutes
  10. When potatoes are done, top with crumbled feta and broil 3-4 minutes or until cheese is melted and blistered
