Macaroni and Cheese Stuffed Peppers

  Ingredients List:

  • 2 cups cooked macaroni
  • 1 onion
  • 1/2 tsp. cinnamon
  • 1-1/2 cups crushed tomatoes
  • 1/2 cup water
  • 4 bell peppers
  • 50g gouda cheese
  • 50g kefalograviera cheese
  • 1 tsp. dried Greek oregano 
  • 6 tbsp.  Greek extra virgin olive oil
  • Salt & pepper to taste


  1.  Pre-heat oven to 425*f/220*c
  2. Cook pasta to desired doneness
  3. In a saucepan, sauté chopped onion in 4 tbsp. olive oil
  4. Add cinnamon, crushed tomatoes and water
  5. Bring to a simmer and add the macaroni stirring to mix well
  6. Top and hollow out bell peppers
  7. Grate and mix together cheeses
  8. Place about 1 tbsp. cheese blend in the bottom of each pepper
  9. Fill each pepper with macaroni
  10. Equally top each stuffed pepper with remaining cheese, drizzle with olive oil and sprinkle with oregano
  11. Bake uncovered for 20-30 minutes or until cheese has melted and blistered

  • Makes 4 servings
  • Use your own blend of cheeses and macaroni type
  • Serve with a side salad
  • Can be made ahead and frozen
