Greek Style Peas & Artichoke Hearts | Greek Vegan Stew

Ingredients List:
- 4 cups peas
- 1 lb. artichoke hearts
- 1 tsp. dried rosemary
- 1 garlic clove
- 1 cup crushed tomatoes
- 1 cup water
- 1 onion
- Bunch of parsley
- Bunch of dill
- 1/3 cup Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- In a stock pot, coarsely chop onion and sauté until translucent in olive oil
- Chop garlic and add to sautéing onions along with the dried rosemary
- Sauté for 3 more minutes
- Add peas & artichoke hearts and saute for 3 more minutes
- Chop and add dill, parsley, crushed tomatoes and water
- Once tomato sauce has come to a boil, reduce heat and simmer for 15-20 minutes

Notes & Tips:
- Makes 4-6 portions
- Serve immediately or can easily be frozen
- Serve with cheese and fresh bread
- To maintain vegan option, serve as is or with vegan cheese
