Greek Style Pork and Rice | Easy One Pot Meal Ready In Under 30 Minutes

Greek Pork and Rice

  Ingredients List:

  • 1/2 lb. pork tenderloin
  • 1 onion
  • 1 cup lentils
  • 3 garlic cloves
  • 8 asparagus stalks
  • 1 bell pepper
  • 1 tsp. tomato paste
  • 1 tsp. chicken base
  • 1 tsp. cumin
  • 1-1/2 cups rice
  • 3 cups water
  • 30g feta cheese
  • Parsley for garnish
  • 100g feta cheese
  • 3 tbsp. Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Cut pork into bite size pieces and in a frying pan brown in olive oil
  2. When pork is almost browned, add lentils to pan and saute for 3 minutes
  3. Slice onion and garlic and add to pan
  4. Chop asparagus into 1" pieces and add to pan
  5. Chop bell pepper and add to pan and saute for 5 minutes
  6. Add tomato paste, chicken base and cumin to pan and saute for 2 minutes
  7. Add rice and water to pan and stir well
  8. Bring to a rolling boil, reduce heat and with cover slightly off simmer until rice is cooked (see video)
  9. Garnish with crumbled feta and parsley

 

Notes & Tips:
  • Makes 4 servings
  • Garnish with feta and parsley
  • Substitute chicken, beef or fish for pork
  • Add chili or sriracha sauce for added spice
