Greek Style Pork and Rice | Easy One Pot Meal Ready In Under 30 Minutes

Ingredients List:
- 1/2 lb. pork tenderloin
- 1 onion
- 1 cup lentils
- 3 garlic cloves
- 8 asparagus stalks
- 1 bell pepper
- 1 tsp. tomato paste
- 1 tsp. chicken base
- 1 tsp. cumin
- 1-1/2 cups rice
- 3 cups water
- 30g feta cheese
- Parsley for garnish
- 100g feta cheese
- 3 tbsp. Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- Cut pork into bite size pieces and in a frying pan brown in olive oil
- When pork is almost browned, add lentils to pan and saute for 3 minutes
- Slice onion and garlic and add to pan
- Chop asparagus into 1" pieces and add to pan
- Chop bell pepper and add to pan and saute for 5 minutes
- Add tomato paste, chicken base and cumin to pan and saute for 2 minutes
- Add rice and water to pan and stir well
- Bring to a rolling boil, reduce heat and with cover slightly off simmer until rice is cooked (see video)
- Garnish with crumbled feta and parsley

- Substitute chicken, beef or fish for pork
- Add chili or sriracha sauce for added spice
