Greek-Style Porkchops & Baked Beans

Method:

  1. Pre-heat oven to 425*f/220*c
  2. Season porkchops with allspice, salt and pepper
  3. In an oven-ready pan, brown porkchops in half the olive oil
  4. Remove porkchops  from pan and set aside
  5. Slice onion and garlic, add remaining olive oil to pan and saute for 5 minutes
  6. Add cumin, rosemary, beans and Kalamata olives to pan and continue to saute for 5 more minutes
  7. Add diced tomatoes to pan and stir to mix well
  8. Place porkchops into sauce making sure to cover porkchops with the sauce
  9. Bake uncovered for 25-35 minutes
  10. Remove from oven and garnish with crumbled feta and parsley 

 

Notes & Tips:
  • Makes 4 portions
  • Serve with Greek salad and fresh bread
  • Chili flakes are optional
  • Omit porkchops for vegetarian option
  • Excellent make-ahead recipe
