Greek Style Quiche with Feta & Sausage

  Ingredients List:

  • 2 Greek pork sausages
  • 1 onion
  • 1 red bell pepper
  • 1 long  eggplant
  • 1 tsp. minced garlic
  • 1 tsp. dried rosemary
  • 1/2 tsp. chili powder
  • 1 tsp. paprika
  • 1 frozen pie shell
  • 150g feta cheese
  • 4 eggs
  • 1 cup milk
  • 1/4 cup Greek extra virgin olive oil
  • Pepper to taste
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. In a large skillet, chop and brown sausage
  3. Once sausage has started browning, chop and add onion, red pepper, eggplant and garlic to skillet and saute for 5 minutes
  4. Add rosemary, paprika and chili powder and continue cooking for another 3 minutes
  5. Crumble 100g of the feta on the bottom of the pie shell
  6. Pour sausage mixture over feta in the pie shell
  7. Beat eggs and add the milk and remaining feta
  8. Stir well to combine
  9. Pour over sausage filling
  10. Bake for 30-40 minutes

 

Notes & Tips:
  • Makes 6-8 servings
  • Allow to sit for 20 minutes after baking
  • Serve with Greek salad
