Greek Style Stuffed Peppers With Couscous

  Ingredients List:

  • 1 onion
  • 2 garlic cloves
  • Bunch of dill
  • Bunch of mint
  • Bunch of parsley
  • 2 cups dry couscous
  • 1 tbsp. tomato paste
  • 2 red bells peppers
  • 2 green bell peppers
  • 2 large  tomatoes
  • 1 large sweet potato
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a food processor, add onion, garlic, herbs, 1/4 cup olive oil and blend
  3. Put couscous in a bowl, drizzle with a little olive oil, season and mix well by hand
  4. Take herb mixture and add to couscous
  5. Mix well by hand to combine
  6. Top and hollow out veggies to be stuffed
  7. Puncture veggies with knife to create slits for moisture and steam to permeate 
  8. Place veggies in a large roasting pan and stuff until full
  9. Peel and cut sweet potato into wedges and place between stuffed veggies
  10. Drizzle over  stuffed veggies with tomato paste that has been diluted in about 1 cup of water
  11. Cover and bake for 45 minutes
  12. Remove cover and continue to bake until veggies are brown and a little blistered on top

 

Notes & Tips:
  • Makes 4 servings
  • Serve with feta cheese and Greek bread
  • Stuffed veggies can be substituted
  • Add optional chili flakes for added heat
