Gruyere Crusted Chicken & Pasta Bake

  Ingredients List:

  • 8 chicken thighs (bone-in, skin-on)
  • 350g penne pasta
  • 1 onion
  • 1 garlic clove
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 28oz crushed tomatoes
  • 1-1/2 cups water
  • 150g feta cheese
  • 150g gruyere cheese
  • 1/2 tsp. dried Greek oregano
  • 1/2 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a large pot, season & brown chicken and set aside
  3. In same pot, chop and saute onions and garlic until soft
  4. Add cinnamon and allspice and saute for 3 more minutes
  5. Add crushed tomatoes & water and bring to a simmer
  6. Add cubed feta to pasta and mix well
  7. Add oregano and return chicken to pot
  8. Grate gruyere over chicken and bake uncovered  for 30 minutes

 

Notes & Tips:
  • Makes 4-8 servings
  • Allow to cool for 20 minutes before serving
  • Serve with Greek salad and bread
  • Can be made ahead and frozen
