Hearty Bacon, Split Pea, Barley and Rice Soup

  Ingredients List:

  • 3 bacon slices
  • 1/4 cup Greek extra virgin olive oil
  • 1 onion
  • 3 carrots
  • 2 cups chopped green beans
  • 1 garlic clove
  • 1 bay leaf
  • 1 tbsp. tomato paste
  • 1 tbsp. organic chicken base
  • 2 cups dried soup mix
  • 4-5 cups water
  • Parmesan cheese rinds (optional)
  • Salt & pepper to taste
 

Method:

  1. Saute bacon in a large pot with olive oil
  2. Add minced garlic and saute for 3 minutes
  3. Chop and add onion, carrots and green beans to pot
  4. Add bay leaf, tomato paste and soup base and saute for 2 mintes
  5. Add soup mix and water
  6. Add parmesan rinds and bring to a rolling boil. Cover, reduce heat and cook for 1 hour or until barley and legumes are cooked through

 

Notes & Tips:
  • Serve immediately
  • Makes 4-6 servings
  • Garnish with feta or sour cream
  • Omit bacon for vegetarian option
