Method:
- In a large stock pot, chop and simmer onion in olive oil
- Add bay leaf, chopped carrot and chopped garlic
- Saute for 5 minutes
- Add beans, oregano, crushed tomatoes and water
- Stir to combine well and bring to a rolling boil
- Add cod, partially cover, reduce heat and simmer for 30 minutes
