Hearty Cod & Bean Stew

  Ingredients List:



  1. In a large stock pot, chop and simmer onion in olive oil
  2. Add bay leaf, chopped carrot and chopped garlic
  3. Saute for 5 minutes
  4. Add beans, oregano, crushed tomatoes and water
  5. Stir to combine well and bring to a rolling boil
  6. Add cod, partially cover, reduce heat and simmer for 30 minutes 


Notes & Tips:
  • Makes 4-6 servings
  • Serve with feta cheese & Greek bread
  • Excellent make-ahead meal
  • Use any type of white fish
