Hearty Greek Lamb and Chickpea Stew

Greek Lamb & Chickpea Stew

  Ingredients List:

  • 2 cups dried chickpeas
  • 1-1/2 lbs. lamb (any cut)
  • 2 carrots
  • 2 celery stalks
  • 4 garlic cloves
  • 2 bay leaves
  • 1 tsp. cumin
  • 1 clove
  • 1 onion
  • Bunch of dill
  • Bunch of mint
  • 3 cups crushed tomatoes
  • 1-1/2 cups water
  • Bunch of parsley
  • 1 tsp. dried Greek oregano 
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. In a heavy stock pot, brown lamb in olive oil
  3. Once lamb has browned on all sides remove from pot and set aside
  4. Slice onions and sauté in same oil as lamb until translucent
  5. Chop carrots, celery and garlic and add to onions. Sauté for about 5 minutes
  6. Add bay leaves, cumin, and chopped fresh herbs to pot
  7. Add crushed tomatoes and water and stir to mix well
  8. Add browned lamb and chickpeas to pot, add oregano and stir well
  9. Place covered pot in pre-heated oven for 2 hours

 

Notes & Tips:
  • Makes 4-6 portions
  • Serve with crusty Greek bread and/or rice
  • Garnish with feta cheese
  • Can be frozen
  • Omit lamb for vegan option
