Hearty Greek Style Tomato & Orzo Soup

  Ingredients List:

  • 1 carrot 
  • 1 celery stalk
  • 1 onion
  • 4 minced garlic cloves
  • Chili pepper (optional)
  • 2 bay leaves
  • 2 lbs. ripe tomatoes
  • 4 cups water
  • 1 tsp. dried Greek oregano
  • 1/4 cup Greek extra virgin olive oil
  • 1 cup orzo
  • 1 heaping tbsp. strained Greek yogurt
  • Salt & pepper to taste
 

Method:

  1. Finely chop celery, onion and carrot and saute in olive oil in a large pot until veggies are soft
  2. Add minced garlic and chili and saute for 2 more minutes
  3. Add bay leaves
  4. Coarsely chop tomatoes and add to pot along with water
  5. Bring tomato mixture  to a boil then reduce heat and simmer for 15-20 minutes
  6. Using an immersion blender, puree soup mixture
  7. Add orzo and oregano and continue cooking until orzo is cooked
  8. Stir in Greek yogurt and serve

 

Notes & Tips:
  • Makes 4-6 servings
  • Can be served hot or cold
  • Omit yogurt for vegan option
  • Serve with crusty Greek bread
  • Can easily be frozen
  • Excellent as a make ahead meal
