Hilopites With Fresh Tomatoes


  Ingredients List:

  • 1 cup hilopites
  • 1 onion
  • 1 garlic clove
  • 1/3 cup Greek extra virgin olive oil
  • 1 cup grated fresh tomatoes
  • 4 cups water
  • Salt & pepper to taste


  1. Finely chop onion and in a large pot saute in olive oil
  2. Peel and crush garlic and add to onion
  3. Once onion and garlic have become translucent (about 8 minutes), grate tomatoes and add to pot
  4. Add hilopites noodles and water and bring to a rolling boil
  5. Reduce heat and simmer uncovered until hilopites noodles are done


Notes & Tips:
  • Makes 4 servings
  • Recipe can be doubled or halved
  • Can be made ahead and frozen
  • Omit cheese for vegan version
