Greek Sausage 2 Ways - Orange & Wine (Krasato)

  Ingredients List:

Basic Sausage:

  • 5 lbs. ground pork
  • 2 tbsp. salt
  • 2 tbsp. paprika
  • 1 tbsp. pepper
  • Natural pork casings

Orange Sausage Add:

  • 1 tsp. ground cloves
  • 1/2 cup chopped orange zest
  • 1/4 cup dry red wine

Red Wine Sausage Add:

  • 1 tsp. ground cloves
  • 3 cups dry red wine

 

 

Method:

  1. In a large mixing bowl combine the ground pork, salt, pepper and paprika

+ To make the orange sausage, add the orange zest, 1/4 cup red wine, 1 tsp. ground cloves and mix very well

 

+ To make the wine sausage, add 3 cups red wine, 1 tsp. ground cloves and mix very well

++ At this point, if you do not have a sausage stuffer simply form sausage meat mixture into patties or links

+++ If you do have a sausage stuffer and want to make full sausages, follow typical sausage stuffing procedures (see video)

 

Notes & Tips:
  • Makes approx. 60-80 6" sausages or patties
  • Add chili for added heat 
  • Very easy to freeze
