Karidopita | Greek Walnut Cake With Syrup

  Ingredients List:

  • 3/4 cup butter
  • 1-1/2 cups sugar
  • 5 eggs
  • 3/4 cup warm milk
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1-1/2 cups A/P flour
  • 1 cup chopped walnuts

SYRUP:

  • 2 cups water
  • 2 cups sugar
  • Zest of 1 lemon
  • 1 cinnamon stick
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. In a large mixing bowl combine butter and sugar and mix well
  3. Add eggs and continue to mix for another 3 minutes
  4. Combine warm milk, baking powder and baking soda and stir to activate frothing
  5. Once frothing, add to mixing bowl and mix for 3 minutes
  6. Add cinnamon and slowly add the flour and mix for another 3 minutes
  7. Add walnuts and mix for a final 3 minutes
  8. Pour batter into 12" baking pan and bake for 30-40 minutes or until a toothpick comes out clean
  9. Set baked cake aside to cool completely
  10. Add all syrup ingredients to a saucepan, bring to a boil and simmer for 5 minutes
  11. With a knife or fork, poke holes throughout the cake (see video)
  12. Gently pour syrup over entire cake and allow to completely soak in before serving

  • Makes 15-24 pieces
  • Serve on its own or with ice cream
  • Raisins can be added to recipe
