Method:
- In a pot, saute chopped onion in olive oil
- Once onion has become translucent, add orzo and lightly cook in sautéing onions
- Slowly start adding water stirring almost constantly
- Once orzo becomes creamy and water has been absorbed, slowly add kefalotyri and stir to mix well until creamy
