Greek Style Lamb With Feta Mashed Potatoes

  Ingredients List:

  • 300g roasted lamb
  • 1-1/2 lbs. potatoes
  • 1 onion
  • 2 garlic cloves
  • 1 leek
  • 1 tsp. dried rosemary
  • Chili flakes (optional)
  • 1 tsp. fennel seed
  • 1 can stout beer
  • 1 cup peas
  • 1 cup corn
  • 2 tbsp. flour
  • 60g feta cheese
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Peel and boil potatoes
  3. In a large pan, chop and saute onion and 1 garlic clove
  4. Chop the leek and add to pan
  5. Add spices and cook for 5 minutes
  6. Add flour and cook for 3 minutes
  7. Add beer and heat until starting to thicken
  8. Add chopped lamb, peas & corn and mix well
  9. Pour lamb filling into baking dish
  10. Drain potatoes and mash
  11. Add remaining chopped garlic, olive oil, pepper & feta and continue mashing until smooth
  12. Pour over lamb filling in baking pan
  13. Bake for 25-35 minutes or until potatoes are golden brown

 

Notes & Tips:
  • Makes 4-6 servings
  • Allow to rest at least 20 minutes before serving
  • If you don't have leftover lamb, just cut lamb into pieces and brown in skillet
  • Add optional chili flakes for added heat
  • Serve with Greek lettuce salad
