Lentil & Orzo Soup | Easy Vegan Soup Recipe

lentil & orzo soup

  Ingredients List:

  • 1 onion
  • 2 garlic cloves
  • Chili flakes (optional)
  • 2 carrots
  • 2 celery stalks
  • 1 zucchini
  • 1 tsp. res pepper paste
  • 1/2 cup orzo
  • 1 can lentils
  • 1 tsp. red wine vinegar
  • 4 cups water
  • 1/2 tsp. dried Greek oregano
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a large pot, chop and add onion & garlic and saute in olive oil for 3 minutes
  2. Chop and add the carrots,  celery and zucchini  and continue to cook for 3 more  minutes
  3. Add the pepper paste and orzo and cook for 3 more minutes
  4. Add the lentils along with the vinegar and water
  5. Bring to a boil and simmer for 25 minutes

 

Notes & Tips:
  • Makes 4-6 servings
  • Can be made ahead and frozen
  • Serve with bread or pitas
  • Add optional chili flakes for added heat
  • Substitute tomato paste for pepper paste
