Lentil & Smoked Ham Soup

  Ingredients List:

  • 1 onion
  • 1/4 cup Greek extra virgin olive oil
  • 1 Celery stalk
  • 1 carrot
  • 1 bay leaf
  • 1/2 cup smoked ham
  • Smoked ham bone (optional)
  • 540ml can lentils
  • 2 cups water
  • Salt & pepper to taste
 

Method:

  1. Chop onion, celery and carrot and in a large pot brown in olive oil
  2. Once veggies are soft (about 5 minutes) chop and add smoked ham & bay leaf
  3. Add lentils and 2 cups water
  4. Bring to a boil, cover, reduce heat and simmer for about 20 minutes

 

Notes & Tips:
  • Recipe can be doubled or tripled
  • Omit ham for vegan option
  • Use extra 1/2 cup smoked ham if no ham bone available
  • Easy make-ahead soup recipe
  • Can be frozen
