Linguine with Burnt Mizithra Cheese and Olive Oil

Ingredients List:
- 500 g linguine (or pasta of choice)
- 1 cup Greek extra virgin olive oil
- 2 tbsp. Crisco or other shortening
- 1-1/2 cups grated mizithra cheese
- Salt & pepper to taste

Method:
- Cook pasta to desired doneness
- In a saucepan, combine olive oil and shortening.
- Heat until shortening has melted and olive oil is hot to almost the smoking point
- Drain pasta and add 3/4 of the grated mizithra mixing well
- Place pasta in serving platter
- Drizzle hot olive oil over pasta and mizithra so you hear the sizzle
- Sprinkle remaining mizithra over hot pasta and serve immediately

Notes & Tips:
- Makes 4-6 servings
- Serve immediately
- Add chili peppers or sriracha for added heat
- If you can't find mizithra, use any hard salty cheese
