Low Carb Shepherd's Pie

low carb shepherd's pie

  Ingredients List:

  • 1/2 lb. lean ground beef
  • 1/2 lb. ground pork
  • 1 head cauliflower
  • 1 onion
  • 1 garlic clove
  • 2 cups chopped green beans
  • 2 cups frozen peas and carrots
  • 1 sweet bell pepper
  • 1-1/2 cups low sugar ketchup
  • 4 tbsp. salted butter
  • 1/4 cup cream
  • 2 tbsp. Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Boil/steam cauliflower until fork tender
  3. In a large skillet, brown ground beef and pork in olive oil
  4. Chop onion and garlic and add to skillet and saute for 5 minutes
  5. Add green beans, peas and carrots
  6. Chop and add bell pepper and continue to cook for 5 more minutes
  7. Stir in ketchup and cook for 10 more minutes
  8. Drain and mash cauliflower
  9. Add in butter and cream and mix well to smooth and  combine
  10. Pour meat mixture into baking dish and spread into even layer
  11. Add cauliflower mash over meat mixture and spread evenly
  12. Bake for 25-35 minutes or until cauliflower is browned or blistered

 

Notes & Tips:
  • Makes 6-8 servings
  • Can be frozen before or after baking
  • Serve with Greek salad
