Greek Tsouxti Makaronada | Sizzling Pasta from Mani

Ingredients List:
- 500g long pasta
- 1/4 cup Greek extra virgin olive oil + extra for egg frying
- 1/4 cup butter
- 1/4 cup grated mizithra cheese
- 1 fried egg per portion
- Kefalotyri cheese for garnish
- Salt & pepper to taste

Method:
- Cook pasta as per usual
- In a large skillet, add olive oil and butter and heat until butter has melted and is heated thoroughly
- Add grated mizithra and slowly heat until browned
- Add cooked pasta and mix well
- Fry 1 egg per person and serve on top of pasta
- Garnish with grated kefalotyri

Notes & Tips:
- Makes 4-6 pasta portions
- Serve immediately
- Ready in under 15 minutes
- Mizithra can be replaced with hard cheese of choice
