Method:

  1. In a bowl, chop lettuce into 1/2" strips
  2. Slice onion & cucumber into 1/4" slices
  3. Chop and add parsley
  4. Add if desired tomato and kalamata olives
  5. In a separate mixing bowl, combine 1/4 cup Greek balsamic vinegar, the juice of 1/2 a lemon, oregano  and 1/3 cup olive oil and drizzle over salad
  6. Crumble feta into salad
  7. Season to taste and mix well to combine
