Mediterranean Crusted Salmon

  Ingredients List:

  • 2-4 salmon filets
  • 2 tbsp. olive oil mayonnaise
  • 1 tsp. Dijon mustard
  • Chili flakes (optional)
  • 30g kefalograviera cheese
  • Small bunch of dill
  • 2 tbsp. Greek extra virgin olive oil
  • 1 lemon
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a food processor, add mayo, Dijon, olive oil, lemon zest and juice, kefalograviera & dill and blend
  3. Place salmon filets onto parchment lined baking sheet
  4. Spread rub on salmon and bake @ 400*f for 20-25 minutes

 

Notes & Tips:
  • Makes 2-6 portions
  • Can be served with cuscus, rice or salad
  • Garnish with lemon and dill
  • Substitute kefalograviera cheese for sharp cheese of choice
