My Mother's Greek-Style Meatloaf

Method:
- Pre-heat oven to 375*f
- In a large bowl, mix ground beef with all the herbs, breadcrumbs and egg
- Grate onion and garlic and add to ground beef
- Mix well and place in 8"x5" greased loaf pan
- Place hardboiled eggs in the centre of the meatloaf lengthwise and cover over
- Bake @ 375*f for 45-60 minutes

Notes & Tips:
- Makes 6-8 servings
- Substitute feta cheese for the hardboiled eggs in the centre
- Can easily be made ahead or frozen
- Excess rendered fat may need to get drained during cooking
