My Mother's Sunday Pot Roast

  Ingredients List:

  • 3 lbs. beef roast (your choice of cut)
  • 2 onions
  • 2 carrots
  • 2 celery stalks
  • 2 lbs. potatoes
  • 4 garlic cloves
  • 4 cloves
  • 2 tbsp. dried rosemary
  • 2 cinnamon sticks
  • 28oz diced tomatoes
  • 1 tbsp. paprika
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 325*f/160*c
  2. Chop onions, carrots, celery and add to roasting pan
  3. Add remaining ingredients EXCEPT the beef  and mix well
  4. Season beef and place on top of veggies in pan and pour diced tomatoes over beef
  5. Sprinkle beef with rosemary and olive oil and cover
  6. Slow roast for 3 hours at 325*f
