No Bake Peanut Butter Chocolate Truffles

  Ingredients List:

  • 1 cup peanut butter
  • 1/2 cup butter
  • 2 cups icing sugar
  • 1 tsp. vanilla extract
  • 350g milk chocolate
  • 100g white chocolate
 

Method:

  1. In a mixing bowl, combine peanut butter and butter and mix well until smooth
  2. Add icing sugar and vanilla and continue to mix for 3 more minutes
  3. Form into 1" balls and place on parchment lined tray
  4. Put in refrigerator for about 30 minutes until firm
  5. Melt milk chocolate either on double boiler or in microwave at 30 second intervals
  6. Once truffles have set in the refrigerator, coat evenly with melted milk chocolate 
  7. Place back in refrigerator for another 30 minutes
  8. Repeat step #5 with white chocolate
  9. Drizzle white chocolate over truffles and chill for 15 minutes before serving

 

Notes & Tips:
  • Makes 35-45 truffles
  • You can use smooth or crunchy peanut butter
  • I prefer salted butter for this recipe because it brings out the chocolate flavour
