One Pan Roast Chicken & Potatoes

  Ingredients List:

  • 1 whole chicken
  • 2 lbs. potatoes
  • 1/3 cup Greek extra virgin olive oil
  • 1-1/2 lemons
  • 1 tbsp. paprika
  • 1 tbsp. pepper
  • 1 tbsp. dried rosemary
  • 2 chicken stock cubes
  • 1/2 garlic bulb
  • 1/2 cup dry Greek white wine
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. Place chicken in roasting pan
  3. Peel and quarter potatoes and place around chicken
  4. In a bowl, combine the olive oil, juice of 1 lemon, paprika, rosemary, pepper and crumble in the stock cubes
  5. Mix well to combine
  6. Pour over chicken saving about 1/4 of the marinade for the potatoes
  7. Spread marinade over chicken evenly
  8. Mix remaining marinade into potatoes
  9. Roast uncovered for about 1-1/2 hours

 

Notes & Tips:
  • Makes 4-6 servings
  • Pieces of chicken can be used instead of whole chicken
  • Any type of paprika can be used (sweet, spicy)
  • Serve with a Greek salad & feta
