Orange Olive Oil Cake
Ingredients List:
- 3 large eggs (room temp.)
- 2 cups a/p flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1-1/4 cups sugar
- Zest of 2 oranges
- 1/2 cup orange juice
- 3/4 cup Greek extra virgin olive oil
- 1/2 cup milk
Method:
- Preheat oven to 350*f / 160*c
- Add the eggs to mixing bowl and whip until pale yellow and creamy
- In a separate bowl combine flour, salt and baking powder and sift together
- Add remaining ingredients to mixing bowl with eggs and whip to combine thoroughly
- Add half the flour mixture to wet ingredients and mix to combine well (3 minutes)
- Add remaining flour mixture and continue mixing for another 3-4 minutes
- Pour batter into greased 9" spring form pan and bake at 350* for about 1 hour or until toothpick comes out clean
Notes & Tips:
- Let cool before garnishing
- Garnish with icing sugar, glaze or chocolate sauce
- Makes 8-10 pieces
