Pasta Flora | Greek Apricot Jam Tart

  Ingredients List:

  • 250g butter
  • 2 tbsp. sugar
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1 egg + 1 yolk
  • Zest of 1 orange
  • 3 tbsp. Greek brandy
  • 3 cups all purpose flour
  • 2 cups apricot jam
  • Flour for board
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. In a mixing bowl, add butter and sugar and mix well
  3. Add baking powder, vanilla, egg, brandy and orange zest and continue mixing until well combined
  4. Replace wire attachment on mixer with dough hook
  5. Gradually add flour and mix well
  6. Place dough on floured work surface and kneed lightly
  7. Divide dough into thirds. Use 1/3 for the top and 2/3 for the bottom
  8. Grease 9"x13" pan and spread 2/3 dough on the bottom evenly
  9. Evenly spread jam over entire bottom dough layer
  10. Spread and cut remaining dough into circle shapes and place over jam (see video)
  11. Brush tops of cookie rounds with egg wash
  12. Bake for 25-35 minutes

 

Notes & Tips:
  • Makes 12-15 pieces
  • Let cool for at least 30 minutes after baking
  • Substitute any flavour jam for apricot
