Pasta Flora | Greek Apricot Jam Tart

Ingredients List:
- 250g butter
- 2 tbsp. sugar
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- 1 egg + 1 yolk
- Zest of 1 orange
- 3 tbsp. Greek brandy
- 3 cups all purpose flour
- 2 cups apricot jam
- Flour for board

Method:
- Pre-heat oven to 350*f/160*c
- In a mixing bowl, add butter and sugar and mix well
- Add baking powder, vanilla, egg, brandy and orange zest and continue mixing until well combined
- Replace wire attachment on mixer with dough hook
- Gradually add flour and mix well
- Place dough on floured work surface and kneed lightly
- Divide dough into thirds. Use 1/3 for the top and 2/3 for the bottom
- Grease 9"x13" pan and spread 2/3 dough on the bottom evenly
- Evenly spread jam over entire bottom dough layer
- Spread and cut remaining dough into circle shapes and place over jam (see video)
- Brush tops of cookie rounds with egg wash
- Bake for 25-35 minutes

Notes & Tips:
- Makes 12-15 pieces
- Let cool for at least 30 minutes after baking
- Substitute any flavour jam for apricot
