Pesto Roasted Chicken and Potatoes

  Ingredients List:

  • 1 whole chicken
  • 3 lbs. potatoes
  • 1/3 cup Greek extra virgin olive oil
  • 2 tbsp. green pesto
  • 2 tbsp. strained Greek yogurt
  • 1 tbsp. paprika 
  • Salt & pepper to taste


  1. Preheat oven to 350*f/155*c
  2. Cut up potatoes and place in a single layer in your  roasting pan
  3. In a bowl, add olive oil, pesto and yogurt and mix well
  4. Pour over chicken and coat evenly allowing excess to fall onto potatoes
  5. Season to taste and roast for approx. 1-1/2 hours


Notes & Tips:
  • Makes 4-6 portions
  • Whole or pieces of chicken can be used
  • Serve with a Greek salad, feta and crusty Greek bread
