Pork & Artichoke Hearts Avgolemono

pork & artichoke hearts avgolemono

  Ingredients List:

  • 2 lbs. pork
  • 2 onions
  • 1/2 cup Greek extra virgin olive oil
  • 1 tbsp. butter
  • 1 lb. artichoke hearts
  • Water as needed
  • 3 eggs
  • 2 lemons
  • Salt & pepper to taste


  1. In a large pot, season and brown pork in olive oil
  2. Chop onions and add to pork
  3. Saute for 5-6 minutes
  4. Add butter to pot and stir
  5. Add artichoke hearts to pot and cover with water
  6. Bring to a boil, reduce heat, cover and simmer for 1-1/2 hours
  7. In a bowl, crack the eggs
  8. Add the juice of the lemons and mix well 
  9. SLOWLY add the hot broth from the pot in VERY SMALL AMOUNTS stirring the egg mixture constantly (see video)
  10. Once lemon egg mixture has come to temperature, slowly add it to the pot with the pork and artichokes
  11. Stir to mix the lemony mixture  agitating the pot. DO NOT mix with a utensil (see video)
