Pork Medallions In A White Wine & Mushroom Reduction

Pork Medallions

  Ingredients List:

  • 1-1/2 lbs. pork tenderloin
  • 1/4 cup Greek extra virgin olive oil
  • 2 onions
  • 2 cloves garlic
  • 1 cup white wine
  • Bunch parsley
  • 1 can condensed cream of mushroom soup
  • 1/2 cup 35% heavy cream
  • 50g feta cheese
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 425*f / 210*c
  2. Cut pork into medallion sized pieces and brown in olive oil
  3. Slice onion and add to browning pork
  4. Saute onion for 4 minutes or until translucent and add chopped garlic
  5. Saute for 2 more minutes before adding the white wine
  6. Allow 3 minutes for alcohol to evaporate from wine and add chopped parsley, condensed mushroom soup and cream
  7. Continue to cook until smooth, crumble in feta and stir to combine
  8. Bake @ 425* for 20-25 minutes

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with rice, potatoes, veggies or as is with fresh crusty bread
  • Garnish with crumbled feta and/or parsley
  • Substitute vegetable stock or apple juice for wine
