Pork Medallions In A White Wine & Mushroom Reduction

Ingredients List:
- 1-1/2 lbs. pork tenderloin
- 1/4 cup Greek extra virgin olive oil
- 2 onions
- 2 cloves garlic
- 1 cup white wine
- Bunch parsley
- 1 can condensed cream of mushroom soup
- 1/2 cup 35% heavy cream
- 50g feta cheese
- Salt & pepper to taste

Method:
- Pre-heat oven to 425*f / 210*c
- Cut pork into medallion sized pieces and brown in olive oil
- Slice onion and add to browning pork
- Saute onion for 4 minutes or until translucent and add chopped garlic
- Saute for 2 more minutes before adding the white wine
- Allow 3 minutes for alcohol to evaporate from wine and add chopped parsley, condensed mushroom soup and cream
- Continue to cook until smooth, crumble in feta and stir to combine
- Bake @ 425* for 20-25 minutes

Notes & Tips:
- Makes 4-6 servings
- Serve with rice, potatoes, veggies or as is with fresh crusty bread
- Garnish with crumbled feta and/or parsley
- Substitute vegetable stock or apple juice for wine
