potatoes & asparagus yiahni

  Ingredients List:

  • 1 onion
  • 4 potatoes
  • Chili flakes (optional)
  • 2 garlic cloves
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cumin
  • 1 lb. asparagus
  • 1 cup crushed tomatoes
  • 1/2 cup water
  • Bunch of parsley
  • Bunch of dill
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Slice and saute onion in a large pot for about 5 minutes
  2. Cut up potatoes into 1" cubes and add to pot
  3. Slice garlic and add to pot along with spices
  4. Stir to evenly combine
  5. Chop asparagus into 1" pieces and add to pot along with crushed tomatoes, water and chopped herbs
  6. Stir, cover and simmer for about 20 minutes or until potatoes are fork tender

 

Notes & Tips:
  • Makes 4-6 servings
  • Add chili flakes for optional heat
  • Serve with Greek bread and feta cheese
