Quick & Easy Cauliflower Hummus

  Ingredients List:

  • 1 head cauliflower (4 cups)
  • 4 garlic cloves (or less lol)
  • Juice of 1 lemon
  • 1/3 cup tahini
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Chop and boil cauliflower until fork tender
  2. Drain and add to food processor
  3. Add remaining ingredients and season
  4. Puree until smooth

 

Notes & Tips:
  • Serve warm or chilled
  • Serve with crackers, pita or veggies
  • Garnish with either Kalamata olives or parsley
  • Drizzle with Greek extra virgin olive oil
  • I used 4 cloves of garlic in this recipe. In the even you don't like garlic... 1) Please do not tell me about it.  2) Feel free to use less garlic
